Instagram Stories are vertical photos and videos that disappear after 24 hours.
They are located at the top of the app and not in the main feed.

How to post an Instagram Story
In the app, tap the plus (+) icon located at the bottom of the screen or in the top left corner.
Then select STORY from the menu at the bottom right of the screen.

How to check the number of views on your Instagram Stories?
If your Insta Story is still live (i.e., it's been less than 24 hours since it was posted), simply tap the Your Story icon on the app's main page to see how many users have viewed it.
Click Activity in the bottom left corner of the screen, then click the number of views to see a list of people who have viewed your Instagram Story and the likes it has received.

Pro tip: This page also lets you access your Story's stats. To do so, simply click the graph icon.

Once the 24 hours have passed (24 hours being the answer to the question: how long do Instagram Stories stay online?) you can still access certain statistics , such as reach and impressions.
For novice users:
Reach is the number of unique accounts that viewed your Story.
Impressions are the total number of times your Story was viewed.
To access your Story statistics, follow these steps:
On the app's home page, tap your profile picture located at the bottom right of the screen.
Tap the menu icon in the top right corner and select Statistics .
In the top right corner, tap Last 7 days to choose the time period you want to see information for: you can then select 7, 14, or 30 days, the previous month, the last 90 days, or a custom date range. Click Refresh .
Scroll down to Content you've shared and tap Stories .
Tap the filter icon to choose your metrics and sorting options.
Click on one of your Stories for more details.
Note that you will not be able to know how many times or how often a user has viewed your Story.
